Eating at the Shebeen
What is Irish food? Irish food is less a style and more of
a philosophy. We don't have an extensive food tradition to
draw from, however we do have a natural bounty, envied the
world over. Whether its Kerry lamb or Limerick bacon, Cashel
Blue cheese or Kerrygold butter, Galway salmon or Dublin Bay
prawns, the quality is amazing. Of course, it is too expensive
to import those great products to distant Vancouver, and why
would we when we have our own natural bounty here. To be true
to our Irish heritage we need simply to seek out the best
of what is available locally.
The next issue is what do you do with it. Over the last 10
years the roar of the Celtic Tiger has called a lot of Irish
people back to Ireland’s shore. These folk had been
living in major North American cities, and their lifestyle
exposed them to the food of many cultures. They brought their
enlightened palettes back with them, and with that came demand.
Chefs in Ireland today have risen to the demand, producing
a product that displays both international flavours and first
class quality.
So Irish food is influenced by many cultures, made with the
